Chocolate Cupcakes (my favourite recipe)
INGREDIENTS:
12 to 14 cupcakes
All purpose flour (maida) 1cup (125g)
Dutch cocoa powder 1/3 cup (40g) (if you don't have you can also use regular cocoa powder same amount)
Baking soda 1/2 teaspoon
Salt 1/4 teaspoon
Caster sugar 1 cup (200g)
Buttermilk 1/2 cup (120ml) (if you don't have buttermilk simply take fresh milk add 1/2 tablespoon of vinegar wait 5 to minutes, buttermilk is ready)
Vegetable oil 1/3 cup (80ml)
Egg 1 (large)
Coffee 1/2 cup (120ml) (heat water add 1 tablespoon of coffee)
Vanilla extract 1 teaspoon
For the frosting:
Butter soften 1/2 cup (115g)
Cocoa powder 1/3 cup (40g)
Icing sugar 1cup (200g)
Olpers cream 1-2 tablespoon
Vanilla extract 1 teaspoon
Salt 1/4 teaspoon
Directions:
Preheat oven at 180°c. Line a muffin pan with cupcake liners.
In large bowl sift flour, cocoa powder, baking soda and salt then add caster sugar, stir and set aside.
In a separate bowl wisk all wet ingredients.
Add dry mixture into wet and mix until well combined. Don't overmix.
Scoop the batter into cupcake liners. Bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean. Allow them to cool.
Make the frosting: In a large bowl beat butter until fluffy, add cocoa powder beat until combined, add sugar beating in between, add vanilla extract, cream and beat until incorporated. Transfer into piping bag. Pipe on cupcakes.
Sprinkle some colorful sprinkles.
